How to repeat:
Users and Privileges --> Select particular user --> Schma Privileges

Suggested fix:
Bring back ability to give certain privileges to certain schema using the MySQL Workbench user interfrace. This used to be possible in the past.

I was actually experiencing this until I realized that just below the text where it says:

"The user 'USER'@'HOST' will have the following access rights to the schema 'SCHEMA':"

there is a hidden resize handle to resize the pane that for some reason became collapsed/hidden after upgrading. After dragging the hidden pane upwards, you can now granularly select permissions as before. When the pane was hidden, the only options available to me were "Unselect All" and "Select All".
