Description:
The list of character set/collation pairings in the drop-down when creating a new schema are not in a useful order.

How to repeat:
1. Right-click on a schema.
2. Select Create Schema ... .
3. Click in the Collation drop-down.

Suggested fix:
Sort them alphabetically.

Fixed as of the upcoming MySQL Workbench 8.0.12 release, and here's the changelog entry:

The character set and collation pairings available after selecting Create
a new schema in the connected server (from the main toolbar) now are
sorted alphabetically in lists.
