is outdated or plain wrong. It says, for example:

"For Connector/ODBC 3.51.14 and later, the package is provided as a compressed tar archive that you manually install. For Connector/ODBC 3.51.13 and earlier the software was provided on a compressed disk image (.dmg) file and included an installer."

While for MyODBC 3.51.30 and 5.1.11 (later than 3.51.14) we can clearly see .dmg binaries (along with compressed tar ones) for several Mac OS X versions:

How to repeat:
Check http://dev.mysql.com/downloads/connector/odbc/ (or http://dev.mysql.com/downloads/connector/odbc/3.51.html#downloads) and then compare to what manual says.

Suggested fix:
Fix the manual to reflect current state.

Updated the installation instructions for Mac OS X, especially for installation with .dmg files.
