What exact server version, 5.x.y, are you working with? I have no problems working with local 5.5.26 on Mac OS X 10.5.6.

Server is 5.5.16-log. Remote connection. I can reproduce the problem consistently.

Can you upload the files in ~/Library/Logs/DiagnosticReports/ that belong to Workbench?

Is it repeatable? Can you describe everything you were doing in the SQL Editor when the crash happened? The crash log says it crashed inside a routine editor, not the table editor, which means the routine editor was at least opened at some time.
