You can change the name of the diagram from the Model -> Diagram Size and Properties... menu command.

Fixed as of the upcoming MySQL Workbench 6.0.x release, and here's the changelog entry: The name of a "Diagram" can now be changed from the diagram tab via "Model", "Diagram Properties and Size...". Thank you for the bug report.
