Description:
It is not possible to change the user name once established in MySQL Administrator on Mac OSX.  The problem is not present on Windows XP.  It is easy enough to work around - delete the user, then create from scratch.

How to repeat:
Open MySQL Administrator on Mac OSX.
Change to Accounts pane.
Add a new user.
Change "newuser" to "Bob"
Click "Save Changes" to create account.
Edit "Bob" to say "Bill"
Click "Save Changes"

User name is not updated in "Accounts" pane.

Quit and restart MySQL Administrator.
Change to Accounts pane.
User name still displays "Bob" in the "Accounts" pane.

Thank you for the report.

Verified on OS X 10.4.

In my case behavior is different: I can rename Bob to Bill, but error is shown and after restart Bob-Bill becomes "newuser" again.

Described behavior I get if after saving Bob I restart MySQL Administrator, then try to change it to Bill.

You are correct, the behaviour I get in 10.5 also is as you describe.
