If I try to open or create a model the application immediately quits and I have to reopen it again. This will happen every time I try to do anything with a model.

How to repeat:
Open the application. Select the Model tab. Choose the "+" icon or an existing model.

Fixed as of the upcoming MySQL Workbench 8.0.36 release, and here's the proposed changelog entry from the documentation team:

On macOS 14, MySQL Workbench would unexpectedly halt when attempting to
open a model.
