Many thanks for writing a feature request. Verified by using Workbench OSS 5.0.27. Layer and table names should be sorted alphabetically in lists.

An entry has been added to the 5.1.6 changelog: MySQL Workbench has been changed so that layers and tables listed in the Layers palette are sorted in alphabetical order, making it easier to find the required object.
