Posted by developer: Fixed as of the upcoming MySQL Workbench 8.0.12 release, and here's the changelog entry: The character set and collation pairings available after selecting Create a new schema in the connected server (from the main toolbar) now are sorted alphabetically in lists. Thank you for the bug report.
