The actual problem is not the 16:9 format but the vertical resolution of less than 800 pixels. WB on Linux assumes that it is running in a default gnome shell on a screen at least 800p high, so it sets the window size to a minimum of 752 (including the title bar) aka. 800 minus the two 24p high top and bottom gnome panels.

When running it on a screen with smaller vertical size, or on 800p with one of the gnome panels increased to use more than 24 pixel vertically (i increased the bottom one on my 1280x800 screen to get a more usable workspace switcher display)
parts of the window start hiding behind the panel bars or even off screen

An entry has been added to the 5.2.22 changelog:

Workbench did not size its application window correctly on
screen sizes with a 16/9 aspect ratio.
